As a busy professional, whipping up a meal during the weekend takes much time and effort. Thus this easy and quick to make fresh vegetable salad is the best go-to dinner as it’s so easy to obtain and prepare these ingredients. I always have these fresh vegetables in my fridge and can certainly eat a good healthy salad for every dinner.

Vegetable base: I always start with a green vegetable base like butterhead lettuce or romaine lettuce, spinach, broccoli or cucumber. For cucumber, I love using Japanese cucumber as it’s crisp and sweet to the taste. I usually make sure the vegetables and ingredients are cut to a consistent bite size.

Tomatoes: Cherry tomatoes or vine tomatoes add to the tanginess of the salad.

Onions: Either white onion or purple onion adds a nice bite to the salad.

Nuts: I also like to add some nuts into my salad, almonds, walnuts, cashews, or even pistachios are perfect healthy options. According to SCMP, even though nuts are high in fat, they are also high in fibre and protein. There are also studies that suggest that nuts might actually reduce risk of obesity over time.

Protein: Sardines, tuna, chicken or even cheese can be added so the salad is a well-balanced meal by itself.

Dressing: The extra virgin olive oil, salt and pepper is a perfect trinity for today’s contemporary cooking. It’s used in almost every other cooking in my household, whether it’s salad or roast potatoes, grilled meat, and others. Depending on the combination of the vegetables, I sometimes add freshly squeezed lemon juice, honey or apple cider vinegar to the dressing, especially with hard and bland vegetables such as kale.

  • Wash & cut vegetables
  • Place the lettuce, tomatoes, onion and almond into a salad bowl
  • Add olive oil, salt and pepper and mix well.
  • Season to taste.

  • 300 g Butterhead lettuce Washed and cut
  • 2 cups Cherry tomatoes Washed and cut
  • White onion Sliced into smaller chunks
  • ½ cup Toasted almonds
  • ½ cup Extra virgin olive oil
  • Himalayan salt
  • Black pepper freshly crushed
