Living in the all-round summer Singapore, I’m always craving for citrusy flavours that compliment our weather the best. Here’s something I really love, combination of salad base, sweet refreshing oranges, healthy superfood avocado and the season pomegranate that’s loaded with ultra health benefits. Salads are part of my daily, if not weekly food staple. It’s easy to assemble, quick to prepare and makes a really enjoyable lunch or dinner.

Avocados are my all-time favourite, and a very versatile ingredient. Turning them into milkshake, sandwich filling, cookies, salad, dips or just eating them on their own. The benefits of avocados are countless, potential health benefits include improving digestion, decreasing risk of depression, and protection against cancer, according to a study. It’s considered a superfood providing substantial amount of healthy monounsaturated fatty acids (MUFA) and contains nearly 20 vitamins and minerals.

We get oranges in Singapore all year round and indeed I always feel blessed to have these wonderful ingredients available to us though Singapore has very limited farming capabilities and most of our resources are imported.

pomegranate

Pomegranates are seasonal. So when I found them in the fresh fruits section of the supermarket, I’ll usually grab a big bag of them. I will usually add them into salads, desserts or just eat them on its own.

Do take note that the pomegranate juice will stain, and you don’t want to destroy the seeds while deseeding them. Pomegranates are among the healthiest fruits on earth as they contain a wide range of beneficial plant compounds. They are loaded with important nutrients such as fibre, protein, vitamins C, K, folate, potassium. Punicalagins and punicic acid found in pomegranate are also two very potent antioxidants. That’s why studies have shown that pomegranate juice is 3 times the antioxidant activity of green tea. In addition, pomegranate has impressive anti-inflammatory properties and may be able help lower blood pressure. The benefits are aplenty.

Summer salad with orange, avocado & pomegranate

A light and refreshing summer salad with orange, avocado & pomegranate on a bed of spinach, purple cabbage, and onions. Perfect for the hot weather.

Ingredients
  

  • 2 cups fresh spinach washed and drained
  • 2 cups purple cabbage soaked, washed and drained
  • cup white onion halved and cut into slices
  • 1 large orange peeled and cut into bite sized chunks
  • 1 large avocado peeled and cut into bite sized chunks
  • 1 large pomegranate only the edible seeds

Salad dressing

  • 3 tbsp extra virgin olive oil
  • 2 tsp Himalayan salt
  • 2 tsp black pepper freshly crushed
  • 2 tbsp lemon juice freshly squeezed

Instructions
 

  • Assemble all the ingredients on the bowl.
  • Add extra virgin olive oil, lemon juice, salt and pepper.
  • Mix well.
  • Serve and enjoy!
