Here's an easy, simple and refreshing jelly mooncake made of agar agar, goji berries and the aromatic Osmanthus tea leaves. You only need 5 ingredients.

Instructions
Wash and soak 1 tbsp goji berries in room temperature water until softened (about 20-30 minutes). Drain off the water and set aside. Note: you can keep the water for drinking later.

Boil 1 litre water over medium high heat. Add 10g of agar agar powder gradually while stirring to make sure there’s no lumps forming.

Add 100g honey rock sugar, season to taste. Let it simmer until the rock sugar melts.

Stir in 1 tbsp Osmanthus tea leaves while the liquid is simmering.

Then stir in 1 tbsp goji berries and let it simmer for about 30 seconds.

Turn off heat. Immediately pour the agar agar mixture into the mooncake mould and let it cool down and set.
Chill in fridge for 1-2 hours. Serve cold and enjoy.
