For those of you who have been working from home since the Covid-19 pandemic, you might have gotten used to cooking and eating more at home. After about 4 months of working from home, I’ve gotten so used to eating healthy home cooked meals and find food in food courts and restaurants a tad too salty and oily. You know that’s the case when you feel thirsty the whole time after eating. Here’s a quick and easy sardines pasta for some of you who love fish and prefer to eat something light for the day. I’ve cooked this sardines pasta in many different variations, added capers, added broccoli, even in tomato based pasta sauce which I’ll share in another post.

Let’s talk about the sardines first, I bought this Tesco sardines in sunflower seed oil from the supermarket. Feel free to replace it with sardines in brine or any other oil, just try not to use the sardines in tomato sauce. For pasta, I choose fusilli because I already have one pack opened in my kitchen but you can use any other pasta such as penne, farfalle, or even gluten-free pasta. I’ve a preference for short fancy pasta for such dish.

The ingredients are very easy to obtain, in fact I always have onions, pasta and tins of sardines or tuna at home. Chilli flakes are added to the pasta for a little spicy kick and can be adjusted according to your preference and taste.

Cooking the pasta is very simple:

  1. Bring water to boil and add fusilli pasta and 1 teaspoon of salt. Cook fusilli until al dente.
  2. Add oil onto pan and then add onions, cook until onion starts to caramelise a little.
  3. Add the tin of sardines into the pan, cook for about 2 minutes with the onions, you can break the sardines with the spatula.
  4. Add cooked fusilli in and cook for another 1 min.
  5. Add black pepper, (the remaining) salt, chilli flakes. Taste and see if you like it, you can adjust the seasoning according to your taste
  6. Serve and enjoy

Sardines pasta with a little spicy kick

Here’s a very simple pasta dish with only 3 main ingredients — onions, tin of sardines, pasta (fusilli in this case).

Ingredients
  

  • 4 cups fusilli pasta

  • 1 tin sardines with sunflower seed oil sardines in brine or any other oil is ok too
  • 3 tbsp extra virgin olive oil
  • 2 tsp Himalayan sea salt
  • 2 tsp crushed black pepper
  • 1 tbsp chilli flakes
