Vegetarian Fried Rice Recipe
This cauliflower fried rice is a healthy, low in carbohydrates and very simple dish, ideal for healthy-conscious people as well as vegetarians and vegans. Cooked in Chinese style, it taste as good as normal fried rice, just much much healthier. Traditional fried rice is best cooked using overnight rice, in this recipe, you just need to replace cooked rice with grated cauliflower rice.

This recipe makes a perfect recipe for people who are into keto and gluten-free diet. Cauliflower is also an extremely healthy vegetable that is a significant source of nutrients.
How do you make cauliflower into rice?
To make cauliflower into rice, it’s really easy. Simply wash and dry the cauliflower thoroughly before cutting it into smaller florets. You can either hand grate it, or put the cut florets into the food processor and pulse until the cauliflowers becomes rice-like sizes. Do take note not to over process it in case it turns too marshy, and make sure the cauliflower is very dry before grating it.
Raw cauliflower rice can be stored in an air tight container for up to 4 days in the fridge. However I find it a tad too raw and by stir frying it like normal fried rice, it really tastes much better.
With normal fried rice, I tend to control the portion. But with cauliflower fried rice, I found that I need to eat a bigger portion in order to feel full.
In this recipe, I used very basic ingredients, just cooking oil, garlic, salt and pepper. You can also add meat, eggs, other kind of vegetables. For seasoning, you can also add other aromatics, soy sauce, mushroom sauce or oyster sauce.

Cauliflower Fried Rice
- 300 g cauliflower
- 2 cloves garlic
- Himalayan pink salt
- Black pepper
- 2 tbsp Extra virgin olive oil
- Wash and pat dry cauliflower
- Cut cauliflower into smaller florets
- Place cut cauliflower into food processor
- Grate cauliflower into rice-like sizes
- Peel and slice garlic
- Heat cooking oil in pan over medium fire
- Saute garlic until slightly golden brown
- Add cauliflower rice
- Stir fry for about 1.5 minutes
- Add seasoning – salt and pepper
- Cook until tender and fluffy
- Enjoy while warm
