Baked corn fritters is a much healthier option to deep fried fritters. With lesser oil used in the cooking process, I’m really loving this recipe as I feel less guilty eating a batch of them at one go.

Interestingly, according to Wikipedia, corn fritters are fried cakes of a dough or batter made of, or containing a featured quantity of, maize. Originating in Native American cuisine, they are a traditional sweet and savoury snack in the Southern United States, as well as Indonesia where they are known as perkedel jagung or bakwan jagung.

To make baked corn fritters, the ingredient list is really simple. I got the corn right from the package so it saves a lot of time from having to cut it from the cob.

  • 300 g corn
  • 1 tbsp miso paste
  • 3 tbsp plain flour
  • cooking oil
  • paprika
  • 1 egg
  • Salt & pepper

Mix the ingredients into a thick consistent paste and place it on a baking mat and you are ready to bake it in the oven. Baked fritters are less crispy than deep fried fritters but because it uses less oil, I believe the health benefits are worth it.

The dipping sauce I made to pair with this baked corn fritters is also very easy to assemble, just mayonnaise and miso paste, mix them well and you get a tasty savoury creamy dipping sauce. I have also tried using the Korean chilli paste Gochujang and mix it with mayonnaise, which has gotten me raving compliments from my chilli loving family. Wasabi with mayonnaise is also another party crowd pleaser. Some other bases I have used before for the dipping sauce includes sour cream and greek yoghurt, mixed with miso paste, all taste good and really depends on what you have in your kitchen.

Baked Corn Fritters – A healthier option to the fried version and a crowd pleaser at my home parties. This recipe uses miso paste for seasoning and also in the dipping sauce.

Ingredients
  

  • 300 g corn
  • 1 tbsp  miso paste
  • 3 tbsp plain flour
  • Cooking oil
  • Paprika
  • 1 egg
  • Salt
  • Black pepper  freshly crushed

Dipping sauce

  • 1 tbsp mayonnaise
  • ½ tbsp miso paste

Instructions
 

  • Mix corn with miso paste, egg, flour, salt, pepper, paprika. Mix well.

  • Pre-heat oven at 180 degree celsius
  • Place rounds of corn mixture onto the baking mat lightly oiled. Try to make it as flat as possible. Bake in pre-heat oven for 15 minutes.
  • Flip the corn fritters and bake for another 10 minutes.

  • Remove from oven and place on cooling rack to cool off.

  • Prepare dipping sauce with mayonnaise and miso paste. Serve and enjoy.

Notes

You can replace corn with other vegetables such as carrot, broccoli, or zucchini.
